Today, the group Bollinger owns the vineyard. Located on 80 hectares of a chalky soil, AYALA produces champagnes with grapes coming from the 17 different vineyards. The grapes are chosen for their respective characters, and able to reflect the style of the house. Everything is being implemented in order to focus on quality over quantity. High-quality gage, the champagnes AYALA were the favorite of George VI, husband of the late Queen Mum.
